Ingredients

    Split Peas, 1 cup
Ham (Kirkland smoke Ham) 1/2 slice (210 g)
    Celery, raw, 1 cup, diced
    Onions, raw, .5 cup, chopped
    Olive Oil, 1 tbsp
Sweet potato, 1 sweetpotato, 5" long, diced
    Pepper, black, .25 tsp
Water, tap, 5 cup (8 fl oz)
Morton Lite Salt, 1/4 tsp, 3 serving

Directions

Sweat the vegetables in the olive oil in a non-stick frying pan on med-high heat. Put in small crock-pot with the rest of the ingredients, cook on low for 4-8 hours. I used an eggbeater to puree the vegetables after it was cooked, and it worked great to make a nice smooth soup with chunks of ham in it.

Makes 7 servings, 1 cup each.
