Ingredients

    1 red onion chopped
    2 garlic cloves, minced
    1 C carrots
    2 tsp fennel seed
    1 C fennel
    2 bay leaves
    1 tsp thyme
    1 tsp basil
    2 cans cannelini beans, drained
    2 C tomatoes, chopped
    1 C spinach
    6 C water
    2 Tbsp olive oil
    1/3 C quinoa

Directions

Heat oil in pan. Add carrots, onion, garlic, fennel, fennel seed, thyme, and bay leaves. Cook until vegetables are tender.

Add beans, tomatoes, water and quinoa. Cook for 20 minutes. Add spinach and basil. Stir and let spinach wilt. Serve with 1 Tbsp grated parmesan cheese.
