Number of Servings: 4

Ingredients

    1 lb carrots, peeled and diced small
    1/2 large white or yellow onion, chopped
    1/3 cup carrot greens (the tops), chopped
    2 tbsp peanut butter
    3 cups vegetable broth
    creole seasoning
    black pepper
    cumin
    garlic

Directions

Saute onion and carrots in olive oil spray in a large soup pot for 10 minutes until carrots are soft and onions are browned. Add remaining ingredients and simmer on low for ten minutes. Blend half of the soup in a blender or chop finely in a food processor, stir back into soup. Season to taste with creole seasoning, black pepper, and cumin.
