Ingredients

    Fruit Filling -
    Dole Frozen Sliced Peaches, 4 cups (about 2 bags)
    Cherries, Dark Sweet Frozen (unsweetened), 1 cup
    Honey, 1/2 cup
    Cinnamon, ground, 1 teaspoon
    Nutmeg, ground, 1/4 teaspoon
    Allspice, 1/4 teaspoon

    Fruit Filling Thickener
    Bob's Red Mill Potato Starch, 1/4 cup
    Water, tap, 1/4 cup

    Oat Crust -
    Smart Balance Buttery Spread, 1/2 cup
    Honey, 1/4 cup
    Vanilla Extract, 1 teaspoon
    Bob's Red Mill Potato Starch, 1/4 cup
    Water, tap, 1/4 cup
    Quaker Old-Fashioned Oats, 4 cups - NOT INSTANT
    All Purpose Flour, 1 cup

Directions

Fruit Filling -
In a Microwave Safe Bowl, Mix the following:
Dole Frozen Sliced Peaches, 4 cups (about 2 bags)
Cherries, Dark Sweet Frozen (unsweetened), 1 cup
Honey, 1/2 cup
Cinnamon, ground, 1 teaspoon
Nutmeg, ground, 1/4 teaspoon
Allspice, 1/4 teaspoon
Microwave for 10-15 minutes on high, stirring every 2 minutes.

Fruit Filling Thickener
In a separate bowl, mix the starch and water. Slowly drizzle the starch mixture into the fruit filling. Stir the entire time.

Return the thickener and fruit mixture to the microwave. Mocrowave on high for 3-6 minutes. Stir at 1 minute intervals.


Oat Crust -
In a microwave safe bowl, melt and mix the following:
Smart Balance Buttery Spread, 1/2 cup
Honey, 1/4 cup
Vanilla Extract, 1 teaspoon

In a separate bowl mix the starch and water.

In a large mixing bowl, mix the oats and flour. Add the butter/honey mixture. Mix well. Add the starch/water mixture. Mix well. Microwave for about 5 minutes.

Pour fruit filling into the bottom of a large cake pan - I prefer Glass ones - and then spoon the crust mixture over the fruit filling. Bake at 350 for 1 hour.

Cut the dessert into 20 squares (5 rows of 4 columns). Each Square equals one serving.
