    2 eggs, beaten
    1 tbsp water
    1/4 cup chopped onion
    1/4 cup chopped mushroom
    1/2 cup shredded cheese


Sautee onion and mushroom in a pan sprayed with Pam spray until they are soft.

In a small bowl, beat eggs, and then beat in the water.

Pour egg mixture into the pan with veggies. As the egg cooks, lift up the edges and let the uncooked egg run underneath. Continue until there is no more uncooked liquid. Add the shredded cheese on top, and then fold half of the egg over (close it like a taco shell). Continue to cook until the cheese melts. Flip once, to make sure all of the egg is cooked evenly.
