Introduction

Number of Servings: 6

Ingredients

    3 - 5 cups of rice (depends on how much you want to make)
    2 chicken breasts (no skin no bones)
    1 can fat free cream of chicken soup
    2 - 3 cups chicken broth (I use Swanson chicken broth 99% fat free)
    Sausage (can be any you like) (I use maple flavored links cut into pieces gives it a different flavor)
    Seasoning for the chicken (I use Paul Purdone Poultry Spice)

Directions

Cut chicken up into pieces, season and cook in a sauce pan. Boil Rice in a separate large boiler. Once rice is finished add in the can of cream of chicken soup and the chicken broth. After the chicken is done add to the mixture only the chicken not the liquid that was created. Next cook your sausage, once finished add to the boiler. This is excellent by itself or you might want to add a salad or bread. We prefer it by itself. Very easy to fix and great the next day.

    This was so easy to make. I used brown rice to add fiber. I feel like I could play with the flavors by adding veggies and different types of sausage. It was even better the next day for breakfast - 6/22/07
