Number of Servings: 36


    Yellow corn meal, 1 cup
    almond meal, 0.25 cup
    Whole Wheat Flour, 0.75 cup
    Organic Sucanat, .5 cup
    Baking Powder, 1 tbsp
    sea salt, 1 tsp
    Milk, nonfat, 1 cup
    Applesauce, unsweetened, .33 cup
    egg white, fresh, 1 large
    Cinnamon, ground, 1 tsp
    Vanilla Extract, 1 tsp


Heat oven to 400, grease 8-inch square baking pan
Combine corn meal, flour, almond meal, sucanat, baking powder , cinnamon and salt in medium bowl. Combine milk, applesauce, vanilla, & egg white in small bowl; mix well. Add milk mixture to flour mixture; stir just until blended. Pour into pan.
Bake 20-25 minutes or until knife inserted in center comes out clean. I cut into 36 small squares (that way I can have a healthy snack without the guilt!!)
