    10 Oz couscous
    4 garlic cloves, minced and divided
    2 large carrots, diced
    4 green onions, diced and divided
    cilantro to taste
    2 navel oranges
    4 Tbsp sugar free cherry jam
    1/2 tsp ground cinnamon
    1/4 tsp cayenne pepper
    4 4oz cod fillets
    1/4 tsp paprika


Bring 2 C water to boil. Add couscous stir and remove from heat and cover for 5 minutes. Fluff with fork and set to the side.

Heat nonstick skillet sprayed with Pam on medium heat. Add onion and 2 garlic cloves and saute for 2 minutes. Add carrots saute for another 2 minutes. Add all but 2 Tbsp of green onion and saute another minute. Season with cilantro, salt and pepper.

In a small bowl, zest one orange and squeeze juice from it. Slice the remaining orange in half and then slice into thin slices leaving skin in tact and set to the side.

Heat a small pan over medium heat sprayed with Pam. Add remaining onion and garlic and saute 2 minutes. Add juice-zest mixture and jam, bring to a simmer and then turn to low. Stir in cinnamon and cayenne and cook 2-3 minutes until the sauce thickens and coats the back of a spoon.

Preheat a broiler. Cover a baking sheet with foil and spray with Pam. Place fish on foil and sprinkle with paprika and one orange slice. Broil on top shelf for 8-10 minutes.

To serve, place 1 C of couscous on plate. Place fish on top and 2 Tbsp sauce and 3 orange slices.

Will have 1 C of couscous left and 1/3 C sauce leftover.
