    Olive Oil, 1 tbsp
    Green curry paste, 1 tsp
    Onions, raw, 163 grams
    Celery, raw, 73 grams
    Potato, 314 grams
    Butternut Squash, 1000 grams
    Granulated Sugar, 2 tsp
    Milk, nonfat, 1 cup
    Rosemary, 1 tbsp
    Thyme, fresh, 2 tsp
    Nutmeg, ground, 1 tsp
    1.5L water


Chop all veggies into chunks. Heat oil and curry paste in a soup pot and fry onions, celery and potato for a few minutes. Add the remainder of the ingredients except for the milk and bring to the boil. Simmer untill the butternut starts to fall apart. Leave to cool for an hour. Add milk and puree untill smooth and creamy. Re-heat and serve. Makes 5 servings.
