Introduction

Ingredients

    4 c cooked long grain brown rice
    1 c. sliced onion
    5 med. sliced mushrooms (5 oz)
    1/4 c. raw sunflower seeds
    3 T. Trader Joe's reduced sodium soy sauce
    2 T. canola oil

Directions

Cook brown rice (1 c. uncooked with 2 c. water. Bring water to boil, add rice and stir. Cover and simmer over low heat approximately 45 minutes.)
Pour oil in fry pan and saute sunflower seeds till LIGHTLY browned and then add onions and mushrooms. Stir and saute just a little longer and add rice. Pour in soy sauce, stir, and cover over low heat for another 10-15 minutes to allow mushrooms and onion to steam a little.
Makes about 6 1 c. servings.
