Ingredients

    1 C Oatmeal
    2 C Buttermilk (or 2 C Milk with 2 T lemon juice or white vinegar)
    1 T canola oil
    1 Egg
    2 Egg whites
    2 t Vanilla extract
    3 T Light brown sugar
    1 1/2 C Whole wheat flour
    1 T Cinnamon
    1 t Baking powder
    1 t Baking soda
    1 T Splenda

Directions

Combine oatmeal and buttermilk; let stand for 2 minutes. Beat in oil, eggs and vanilla. Combine dry ingredients and add to wet ingredients, stirring until combined. Cook in waffle iron.

Makes 5 servings of 2 waffles (10 waffles per recipe)

    Very healthy and have a good flavor. I think they would be great with a little applesauce mixed in, maybe to replace the oil or an egg. They reheat well from frozen in the toaster, and even just half a serving is very satisfying. - 3/8/08
