Ingredients

8-Pork Chops ( Bone in center cut ) 1/2 inch thick
2 -14.5 oz. cans Del Monte Diced Tomatoes with Basil,Garlic & Oregano( no salt added)
1-Medium Onion
1-Green Bell Pepper
9-Cloves of Garlic
4 - tbsps. Olive Oil
Tomato paste
Salt & Pepper to Taste
Flour for dredging
Directions
Dredge Chops in flour and set aside
Heat a large skillet and add 3 tbsps. Olive Oil
Sear 4 chops on each side for about 3-4 minutes
Remove and set aside while searing remaining chops
Meanwhile chop onion & bell pepper to around 1/2 inch size pieces
Saute in a dutch oven or large pot with the remaining tbsp. oil until done, around 3-4 minutes
Mince garlic and add to the pot after reducing heat to low
Cook for another 3 minutes stirring to mix with pepper and onion and prevent garlic from burning
Add the pork chops to the pot and cover with the cans of diced tomatoes
Stir a bit then cover for the first hour and simmer stirring occasionally
Remove cover for 1 and 1/2 hours, cooking until meat separates from the bones with ease
Add tomato paste as needed to thicken
I like to serve on top of mashed potatoes ,but it's very good on pasta as well
Makes a hearty dinner for 4-8
