Introduction
I used whole wheat penne with this recipe, but any pasta that holds up to a thick sauce will be perfect. For more protein, sometimes I add up to one pound of chicken breasts. Ingredients

.5 lbs boneless, skinless chicken breasts , salt and pepper to taste
2T olive oil
.5 C diced celery
.25 C diced green peppers
pinch red pepper flakes
.5 C diced onion
2 large garlic cloves - finely diced
1-2 oz pimentos in juice
pinch red pepper flakes
1 T chili powder
1 t cumin
1 can Rotel tomatoes with chilis and juice
1 can reduced fat cream of mushroom soup
1 C shredded cheddar cheese, plus .5 C for topping
salt and pepper to taste
.75 pound whole wheat penne pasta
reduced fat chicken broth for moisture if necessary
Directions
Chicken:
Season chicken with salt and pepper. Cook at 425 degrees for 25 minutes. Cool, dice, and set aside.
Pasta:
Boil whole wheat penne in saled water until near al dente. About 9-11 minutes.
Sauce:
Saute diced celery, green peppers, and red pepper flakes in oil for 10 minutes.
Add diced onions, pimentos, and garlic and saute for an additional 10 minutes.
Add chili powder and cumin.
Add Rotel, cream of mushroom soup, and cheese.
Heat until cheese is melted and flavors are blended.
Pull it together:
In a large mixing bowl, mix chicken, sauce and pasta until
well blended. Pour into greased cassserole dish. Top with remaining cheese. Bake at 350 for 30 minutes until bubbly and cheese is melted.
Makes 8 servings.
