Number of Servings: 4


    1 lb - Chicken Breast Skin & Bones removed
    3 tbsp - Bisquick, Heart Smart (mix only)
    1/4 tsp - White Pepper
    1/4 tsp - Paprika
    1 tbsp - shredded or grated Cheese
    4 tsp - Olive Oil
    3 cloves - Garlic
    2 cups - sliced Mushrooms
    1/8 cup - Sun Dried Tomatoes (dry, not in oil)
    1/4 cup - White Wine
    1 tbsp - Capers
    2 tbsp - Fat Free Sour Cream


1) Dice chicken breast into bite sized pieces.

2) Combine bisquick, white pepper, paprika and cheese together, and dredge chicken pieces in this mixture.

3) In a large Nonstick skillet over medium heat, heat 2 teaspoons of the oil. Cook the chicken until golden and cooked through, 4-5 minutes on each side. Transfer to bowl or plate, and set aside.

4) In the skillet, heat the remaining 2 teaspoons of oil. Sauté the garlic, mushrooms and tomatoes, stirring constantly, 2-3 minutes. Pour in 1/4 cup of the wine (reserving the other half for later); cook until the liquid evaporates, 1-2 minutes. Add the chicken back into the skillet, and mix thoroughly. Add the remaining 1/4 cup of wine and capers, and let cook for an additional 2 minutes. Remove from heat, and stir in sour cream.

Serve over Pasta or rice if desired.
