    250 g (8 oz) de pasta (spaghetti, linguine, fettuccine)
    A little olive oil

    60 ml ( cup) of diced pancetta or bacon (best to use fresh)

    2 eggs
    60 ml ( cup) of grated parmesan cheese (best to use fresh)
    Freshly ground pepper

    Chopped green onion (optional)

    Freshly chopped parsley (optional)


Cook pasta. Keep a bit of the water once finished.

While pasta are cooking, heat a bit of olive oil in pan and cook pancetta at medium-high heat for a few minutes. Add a bit of pasta water to pan to tenderize meat. If using bacon, this is not necessary.

In a large serving bowl add eggs and parmesan and mix with a fork. Add pepper to taste. When pasta are done, strain and mix with pancetta. Mix well, Then add pasta to egg mixture and mix well to cover pasta. If egg mixture coagulates, add a bit of pasta water and mix.

Add to plates and top with a little grated parmesan.
