    3 egg whites (beaten)
    2 Tbsp. Low Moisture/Part Skim Mozzarella
    1/4 Avacado Peeled/Chopped
    1 Fat Free Flour Tortilla
    1 Tbsp. Salsa


Heat Flour tortill in frying pan sprayed with Pam.. Set Aside
Add the Avocado and gently toss to cook.(approx
30 seconds)..Add the Beaten egg whites and gently scramble with the avocado until whites are
done. When done to your liking, Put all on the
tortilla and sprinkle with cheese and salsa.

  • This is very good, I substituted egg beaters for egg whites and used a Whole grain tortilla as a substitution for the fat free for extra fiber(5-6 grams). Also try nonfat or 2% mozzarella to lower the fat content a little since there's already avacado. - 6/23/07
