Ingredients

    10 Potatoes, boiled, peeled and diced
    1 Large Yellow Onion, diced
    4 Large Ribs Celery, diced
    1 teaspoon garlic powder
    2 Cubes Not Chick'n Boullion Cubes
    4 Tablespoons Earth Balance Margarine
    5 Cups Plain Silk Soymilk
    2 Cups Water

    For Garnish:
    Bacos
    Chopped Green Onion
    Salt and Pepper to Taste

Directions

Saute onion and celery in melted margarine and boullion and spices until tender. Add Potatoes and Soymilk and water to mixture and heat through. Use a submersible blender to blend to desire consistency. Serve with pepper, chopped scallion and bacos.

This has been extremely popular with vegan and non-vegan friends alike. Keeps great in the fridge, too.
