Introduction

This recipe is easy and yummy. Don't be scared off by the V8 juice. I hate V8 and absolutely love this. Called grandmas chicken because it came from my mom and that is what the kids always asked for. Ingredients

    5 boneless skinless chicken thighs
    1 can V8 juice
    1 large vidalia onion
    1 large green pepper
    garlic

Directions

Brown the chicken thighs in a little oil (or spray)
After browned removed from pan and cook sliced green pepper and sliced onion until a little soft.
Add as much garlic as you like.
Put chicken thighs back in pot.
Pour 1 can V8 juice into pot.
I add some pepper and salt substitute
Place lid on pot and cook on medium for approx 1 hour
I serve over rice.
