Introduction

This can be used as a vegan recipe if you use veg. broth instead. Thick soup for a cold night. Mung beans are like lentils too for those that don't know. This is a very simple tasting meal with no overbearing herb flavors. You can doctor with sauces if you would like, but we like just a hearty warm bowl occasionally. Makes 4 quarts of soup. Ingredients

    Mung Beans, 2 cup (remove)
    Chicken Broth, 4 cup (8 fl oz) (remove)
    Celery, cooked, 1 stalks (remove)
    Onions, raw, .5 cup, chopped (remove)
    *Baked Potato, with skin, 1 large (3" to 4-1/4" dia. (remove)
    Mushrooms, cooked, 1 cup pieces (remove)

Directions

Bring beans to boil and simmer until soft, then rinse beans. In pan, saute celery, onion, carrots and mushrooms. Bake potatoe in microwave until cooked through. Add all ingredients to pot, bring to boil and simmer until flavor is mixed well.
