Number of Servings: 4


    1 T olive oil
    2 chopped garlic cloves
    2 med carrots, chopped
    1 med onion, chopped
    4 cups chicken broth
    1.5 cups water
    1 cup corn
    2 T lime juice
    10 oz shredded chicken
    1/2 cup loosely packed, chopped cilantro
    2 plum tomatoes, chopped
    1 ripe medium avocado, chopped
    Tortilla chips (optional)


Heat 1 T oil and cook onions, carrots, and celery until tender. Add cumin, stir in. Add chicken broth and water, bring to a boil. Once at a boil, add chicken, corn, lime juice, and cilantro. Bring to a boil again. Remove from heat, stir in tomatoes. Ladle into 4 large bowls, sprinkle with avocado pieces, and accompany with chips to crush into soup.
