    1 C raisins
    1 C wheat flour
    3 1/4 C white flour
    3 cups sugar
    1/2 Tbsp baking powder
    1/2 Tbsp baking soda
    1/2 Tbsp salt
    1/2 Tbsp nutmeg
    1/2 Tbsp cinnamon
    1/2 Tbsp cloves
    1 tsp cardamom
    4 eggs
    3 egg whites
    1 (29-ounce) can pumpkin
    1 C unsweetened applesauce


Preheat oven to 350F. Soak raisins in hot water for 10 minutes to plump, then drain and chop.
In large bowl, combine dry ingredients. In a small bowl, mix eggs, pumpkin, and applesauce until smooth. Add the pumpkin mixture and stir until combined. Gently stir in raisins.
Fill lightly greased muffin cups 1/2 to 2/3 full. Bake 25 to 35 minutes
Makes 36 muffins.
