    1 pound boned chicken
    1 can no salt stewed tomatoes
    1 can black beans
    1 cup brown rice, uncooked
    1 tsp. Italian seasoning
    4 cups water
    1 cup sliced zucchini
    2 cups chopped cabbage
    1 can mixed vegetables
    1 can chopped spinach or frozen


Simmer the chicken in the water and seasoning until meat starts to fall off the bones. Remove the chicken and remove from bones. Skim off all the fat. (This is easier if you put it in the fridge for a couple of hours or overnight.) I usually simmer one day and then finish the next day. Add the veggies and rice and let simmer in crockpot until rice is done and it is time to eat.
