    1 cup red or yellow beets scrubbed and leaves and stem cut off
    1/4 cup fresh orange juice
    1/4 cup shallots
    2 Tbsp olive oil
    1 Tbsp red wine vinegar
    1/2 tsp salt
    1/4 tsp pepper freshly ground or to taste
    6 cups baby arugula leaves about 4 oz
    2 med orange peel and pith removed sliced


preheat oven 400 degree. place beets on a large piece of foil fold and seal cook for about an hour on a cookie sheet. till tender
cool beets slightly when cool rub off skin. slice thin
In a bowl mix OJ shallots oil vinegar salt.
add arugula toss and coat.
divide arugula on 4 plates top with beets orange and drizzle with remaining juice. Add pepper over top if desired.
