    Extra Lean Ground Beef - 2.5 lbs
    Onion - 1 large
    Garlic - 1 bulb
    Crushed Tomatoes - 2 large cans
    Oregano - 4 tbsp
    Basil - 2 tbsp
    Crushed Red Chili Peppers, dry - 2 tbsp
    Chili Powder - 4 tbsp
    Paprika, 2 tbsp
    Whole Wheat Lasagana noodles - 24(uncooked)
    Cottage cheese - 1.5 large containers
    Parmesan Cheese, grated - 1 cup (grated)
    Cheddar Cheese, low fat, 18% mf - 4 cups
    mozzarella Cheese, low fat, 18 % mf - 2 (grated)


Brown ground beef with onions and garlic. Add the oregano, basil and crushed chili's half way through the browning process. Once the meat is browned, nice caramelized, put in the two cans of crushed tomatoes, fill the cans 1/2 full with water to wash out all the tomatoe. Add the rest of the spices and simmer for about an hour.

Once the sauce is cooked, get two disposable small roast pans. I prefer these because they are deeper than a lasagana pan. Layer, sauce, noodles (uncooked), cheddar cheese, noodles, cottage cheese and parmasan cheese mixed together, noodles, sauce, mozzarella cheese.

Cover with tin foil and bake at 400 degrees for 1 hour. Remove foil and bake an additional half hour or until cheese is browned.

This makes 2 of the small roast pans. Cut each pan into 12 servings. Once cooled it freezes wonderfully for quick, tasty and nutritious meal. Serve with green salad and fruit for dessert.
