Ingredients

3 tbsp olive oil
1 large onion, peeled and chopped
1/2 red bell pepper, seeds and ribs removed, chopped
2 garlic cloves, peeled and minced
1 - 28 oz can crushed tomatoes
1 - 6 oz can tomato paste
1/2 c. dry white wine
1/2 c. water
2 tbsp fresh chopped oregano/2 tsp dried
2 tbsp fresh chopped basil/2 tsp dried
1 tbsp fresh rosemary/1 tsp dried
1 bay leaf
Directions
1. Heat olive oil in a medium skillet over medium-high heat. Add onion, pepper, and garlic. Cook, stirring frequently until onion is translucent. Scrape mixture into slow cooker.
2. Add tomatoes, tomato paste, wine, water, oregano, basil, rosemary, and bay leaf. Stir well. Cook on low 6-8 hours (or high 3-4 hours) or until vegetables are tender.
3. If cooking on low, increase heat to high. Cook sauce uncovered for 1 hour, stirring occasionally, until slightly thickened. Remove and discard bay leaf, season to taste with salt and pepper.
