Number of Servings: 1


    Egg, whole - 1 extra large
    Egg white - 1 (or 3 Tbsp packed liquid egg white)
    Wondra Flour - 2 tsp
    Fat Free Half & Half - 2 Tbsp

    Plain Yogurt, - 1/4 cup
    Fat free Ricotta Cheese - 1/4 cup
    Noncaloric sweetener (Splenda, Truvia, etc.) - 1 packet

    Any all fruit spread - 3 Tbsp (I use mixed berries)


In a small bowl, combine ricotta cheese, yorgurt, and sweetener. Set aside.

Preheat large skillet on medium heat. Whisk together whole egg, egg white, flour, and half & half in a small bowl. Spray skillet with cooking spray. Pour half of the batter into the skillet and swirl to coat thinly like a crepe. Cook until set and bottom is just turning brown, then flip and cook other side for just a few seconds. Remove to a plate Repeat with the second half of the batter.

Fill each crepe with half of the cheese/yogurt mixture, roll up and top each with half the berry jam.

Makes 1 serving.
