Introduction

Marinate 1-24hrs. Marinate 1-24hrs.
Number of Servings: 4

Ingredients

    For the Salmon
    1 tbl sugar free maple syrup
    1 tbl teriyaki sauce
    1 tbl pineapple juice
    1 tsp minced ginger
    1 clove garlic mashed
    1 6oz salmon filets

    For the Salsa
    1 med ripe tomato chopped
    1/4 cup chopped red pepper
    1/2 jalapeno pepper finely chopped
    1/2 cup pineapple chunks fresh or canned
    1 tsp salt
    1 tbl sugar


Directions

Place salmon in resealable bag. Combine the rest of the ingredients in a non reactive bowk or measuring cup. Pour marinade over filets and marinate 1-24hrs. In a grill basket sprayed with cooking spray, grill salmon skin side down over hot coals. Flip after 2-3 min and cook another 1-3min or until desired doneness. Serve with pineapple salsa. Serves 4.
