Introduction

A healthier chocolate chip cookie which can be vegan if you use carob chips or raisins. A healthier chocolate chip cookie which can be vegan if you use carob chips or raisins.
Number of Servings: 30

Ingredients

    1/3 C Coconut oil or Margarine (non hydrogenated)
    1/3 C Grapeseed Oil or Veg Oil
    1 1/2 C Sugar
    2/3 C Milk (Soy, Rice, So Delicious Coconut)
    2 tsp Vanilla
    2 1/2 C Whole Wheat Pastry Flour (or regular whole wheat)
    1 1/4 C Rolled Oats
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/2 C Chopped Walnuts
    1/2 C Chocolate Chips (or Carob for Vegans)

Directions

Makes 2 Dozen Cookies

Cream together coconut oil, vegetable oil and sugar until well blended. Add in milk and vanilla and blend. In a separate bowl, mix together the flour, oats, baking powder and soda. Stir dry ingredients into wet. When half mixed in, add the walnuts and chocolate chips. Mix everything until just blended, being careful to not overmix. Refrigerate for 20-30 minutes. Drop by tablespoon onto parchment or lightly greased baking sheet. Be sure to give them space to spread. Bake at 375 for about 8-12 minutes.
