Introduction

This crepe batter recipe incorporates instant masa for a more robust flavor. Good for using up masa. This crepe batter recipe incorporates instant masa for a more robust flavor. Good for using up masa.
Number of Servings: 10

Ingredients

    2 large eggs
    1 cup milk
    1/2 cup water
    1/2 tsp salt (I used sea salt)
    1/2 cup all-purpose flour
    1/2 cup Maseca instant masa
    3 tbsp canola (or corn) oil

Directions

Combine all ingredients. Cover the container and refrigerate for 30 minutes.

Heat a skillet then lubricate it with cooking spray, butter, or oil. Add two tablespoons batter and swirl to cover the bottom of the pan. Cook until the color turns golden brown on the bottom. Flip and cook until the crepe sets.

Pile them up on a plate as you cook. Fill with healthy, savory fillings.

Makes 10-2 crepe servings
