Introduction

Modified from a favorite I used to make and love, but just had needed a healthy upgrade.

I paired with a salad made of mixed greens, craisins, feta, and walnuts which is not included in calorie count/ingredient list.

Ingredients

    4 Morning star Italian sausage (or any kind of veggie sausage)
    4 Tbsp Parmesan
    4 Red Potato
    2 Tbsp Olive Oil
    Salt
    Pepper
    Paprika
    Garlic
    Other seasonings to taste

Directions

Slice four red potato into quarters length wise. Place cut side up in baking dish. Cover with salt, pepper, garlic, touch of paprika (any seasonings really), and parmesan. Top with 4 morningstar veggie "italian sausage", and drizzle with just a touch of olive oil. Bake for one hour at 350, turning sausage half way through cooking.
