Number of Servings: 6


    2 cups 1% milk
    3 tbsp splenda
    1 egg yolk beaten
    3 tbsp tapioca granulated
    1 tsp vanilla
    1 egg white
    3 tbsp splenda


In a large sauce pan mix together milk, 3 tbsp splenda, edd yolk and tapioca. Let sit for 5min then bring mixture to a boil under low/medium heat. Once at a full boil and is thickened. Remove from heat. Add vanilla
Place egg white in a large bowl and beat till frothy, slowly add in 3 tbsp splenda and continue mixing till forms stiff peaks. Fold mixture into the pudding till completely mixed in. There will be small amounts of white clumps thoughout the mixture, that is ok. Serve warm or cold
