    Cooking spray
    1 cup sliced carrot
    1 TBSP Chili powder
    1/2 cup chopped onion
    3/4 cup water
    1/2 cup instant brown rice
    1 (15-oz) can black beans, rinsed and drained
    1/2 cup (2 oz) Kraft Natural Cheese Fat-Free shredded Mozzarella
    1 1/2 TBSP Lou Ana Pure Safflower Oil
    3/4 teaspoon ground cumin
    1/2 teaspoon salt
    3 TBSP parsley
    4 lime wedges
    4 TBSP Fat-Free sour cream (optional)


1. Heat a Dutch oven over medium-high heat; coat pan with cooking spray. Add carrot, chili powder, and onion; saute 5 minutes or until onion is tender, stirring often.
2. Add water and rice. Cover, reduce heat, and stir. Cover; let stand 5 minutes or until liquid is absorbed.
3. Add beans and next 4 ingredients; remove from heat. Cover; let stand 3 minutes. Spoon into bowls. Sprinkle evenly with parsley; top each with a lime wedge and sour cream, if desired. Yield: 4 servings (Serving Size: 1 cup)
