Introduction

Minnestroni with a few healthy twists. This version has pinto beans instead of kidney beans because that is what I happened to have left over. Minnestroni with a few healthy twists. This version has pinto beans instead of kidney beans because that is what I happened to have left over.
Number of Servings: 10

Ingredients

    I can crushed tomatoes
    2 cups cooked pinto beans
    20 big baby carrots cooked
    4 oz. pasta cooked
    1/2 cup frozed spinach chopped
    20 fresh mushroom slices
    1 tbs olive oil
    Bay leaf
    TBS each: Basil and garlic
    salt and pepper to taste
    Makes 10 one-cup servings.
    great topped with mozzarella cheese.

Directions

Combine all ingredients and let simmer.
