Introduction

This is a quick, tasty egg salad to make. You save major calories and gain a nice zip in your flavor with the mustard. This recipe is enough to fill two pita halves, but is also good on toast or crackers.

This is a quick, tasty egg salad to make. You save major calories and gain a nice zip in your flavor with the mustard. This recipe is enough to fill two pita halves, but is also good on toast or crackers.

Ingredients

    2 Hard boiled eggs, chopped
    0.5 T Chopped raw onion
    0.5 T Sweet pickle relish
    0.5 T Light Miracle Whip
    0.5 T Yellow mustard
    Salt and Pepper (to taste, if desired)

Directions

While your eggs are cooking (cover in with at least one inch of water; bring water to a rolling boil on HIGH heat; remove from heat and cover tightly; let stand 10 minutes), chop the onion and combine with the relish, Miracle Whip and mustard in a small bowl.

Run cold water over the eggs to stop the cooking process. Peel and chop roughly. Add eggs to mustard mixture. Serve immediately or refrigerate until ready to eat.
