    3 oz carrots, sliced on a diagonal
    3 oz sugar snap peas
    1 bunch scallions - slice all but two in large pieces on a diagonal - slice the other two thin for garnish
    2 cloves garlic
    1 tsp minced ginger
    1 tsp sesame oil
    1/2 cup vegetable broth (or chicken)
    3 tbsp Natural Peanut Butter (creamy or chunky)
    1 tbsp honey
    2.5 tbsp lite soy sauce
    8 oz whole wheat linguine
    1 oz lightly salted peanuts, chopped
    red pepper flakes (optional)


1. Bring a large pot of water to a boil.

2. Add noodles and cook until tender according to package directions. Drain.

3. Heat a skillet over medium-high heat. Add the sesame oil and stir fry the carrots, peas, large-cut scallions, ginger and garlic for a few minutes, until cooked until desired. Add noodles to vegetable mixture.

4. Meanwhile, combine vegetable broth, peanut butter, honey and soy sauce in a small saucepan. Cook over medium heat until peanut butter melts and is heated through. Poor over noodles and toss to coat. Garnish with and peanuts and green onions if desired. Makes 4 servings.
