    1 small zucchini, chopped
    1 large tomato, chopped
    1/4 onion, chopped
    1/3 cup grated Parmesan cheese
    1/4 cup Bisquick Heart Smart mix
    1/2 cup skim milk
    1/2 cup egg substitute or two eggs
    1/4 tsp. salt
    dash pepper


1. Heat oven to 400F. Lightly spray 9X5 glass loaf pan with cooking spray. Sprinle zucchini, tomato, onion and cheese in dish.
2. Combine remaining ingredients in medium bowl. Stir until blended. Pour over vegetables and cheese.
3. Bake 30 -35 minutes or until knife comes out clean. Cool 5 minutes before seving.
