Introduction

This recipe was shared with me from one of my dearest friends whose mother happens to be a Chef. I combined this rice with the Chicken-Enchelada Style Slow Cooker Recipe. Number of Servings: 9

Ingredients

    5 cups Mahatma Long Grain Rice
    2 8oz cans of tomato sauce
    Olive Oil
    Cumin
    Celantro
    Season All

Directions

Place olive oil in bottom of pan just enough to cover it. Add 5 cups of rice, and mix with olive oil. On low heat allow rice to brown continually stirring. Once the rice is a little brown, take off of stove-eye and add tomato sauce. Add 6 cups of water. Also add cumin, celantro, and season all to taste. Cumin and Celatro have no nutritional value. Cover and place on stove for approximately 20 minutes. Rice is done when it can be cut with a fork. If the rice is not tender enough, add water. Watch rice closely to keep from scorching. Makes 9 servings of 3/4 c each.
