    1 TBSP Olive Oil
    1 Onion
    1 Green Pepper
    5 Cloves Garlic
    1.5 Cups Quinoa
    2 Cups Vegetable Broth + about 1-2 cups water
    1 Can Kidney Beans
    1 Can Diced Tomatoes
    1 Cup Frozen Corn
    1-2 TBSP Cajun Spice
    1 tsp Salt
    Tabasco to taste


Makes 6 servings of about 2 cups each. If using as a side dish, divide nutritional info in half for 12 1-cup servings.

Dice onion, pepper, and garlic.
Rinse the quinoa a few times.
Rinse the kidney beans.

Heat oil in a large pot and add the onion, pepper and garlic. Saute a few minutes til they start to get soft and the onions are translucent.
Add the quinoa and the cajun spice and stir. Saute a minute or two.
Add the veggie broth, beans, tomatoes, and corn.
Bring to a boil and then simmer for 15 minutes or until the quinoa is done. Youwill need to stir every 5 minutes or so. If the water is getting low before the quinoa is done, add a cup of water.

Add tobasco to taste (or serve and add tobasco individually).
