This is a family favorite on a cold winter's day! This is a family favorite on a cold winter's day!
Number of Servings: 20


    5 lb. potatoes, peeled and diced
    2 cups lean ham (chopped)
    1 can evaporated (fat free) milk
    1/2 stick light margarine
    1/2 onion, diced
    1 pkg. dry onion soup
    1/3 cup (approx.) flour
    4 cups cheddar cheese, shredded
    Instant potato flakes (optional)


Put potatoes in kettle and just barely cover with water. Cook until fork tender. Add ham. In skillet melt margarine and fry diced onion to desired tenderness. Add the flour till all the butter it absorbed and then add the entire can of evaporated milk. (room temperature) Stir constantly till thickened, and then add cheese. Once cheese is melted add the mixture slowly to potato mixture. Add dry onion soup. Season to taste. If soup is not thick as desired add potato flakes till it is the desired thickness. Enjoy!
