    1 1/2 c. all-purpose flour (Opt: substitute whole wheat flour)
    1 1/2 c. rolled oats
    2 tsp. baking soda
    6-8 T. honey (or agave)
    2 tsp. vanilla extract
    1 T. Smart Balance
    Opt: Add 1 cup raisins, craisins, dried fruit, chocolate chips, or nuts, etc.

    **NOTE: Cookies tend to come out pretty hard and crunchy, so if you prefer softer cookies add either 1 large egg, two egg whites, or the equivalent Egg Beater mixture.


Combine dry ingredients in a large bowl.

In a separate bowl whip together the wet ingredients and the add to the dry mix in the large bowl.

Spoon out twenty (20) 2-inch balls and place on greased cookie sheet. Cookies do not expand, so you can pack them in! Bake at 350F for about 10-15min. or until golden brown.
