Ingredients

    Heat oil in large pot over med heat. Add onions and carrots. Cook 3 minutes. Add mushrooms,cook 2 more minutes. Add broth and barley, cover and bring to boil. Simmer until tender, about 12 minutes. Stir in tomatoes and chiptole chilies. Cover and simmer 5 minutes. Put in shallow bowls and top with crumbled feta.
