Ingredients

    4 boneless skinless chicken breast, (1lb)
    1 t, kosher salt
    1/4 c flour
    3 t evoo
    2 large shallots, chopped
    1/2 cup dry white wine
    1 14oz can chicken broth
    1/3 c fat free sour cream
    1 T dijon mustard
    1/2 c chives

Directions

Place chicken between two pieces of plastic wrap and pound out to be about 1/2 an inch thick. Season both sides of chicken with salt, dredge in the flour and shake off excess.
Heat 2 t oil in large nonstick pan over medium high heat. add chicken and cook untill golden brown, about 2 minutes per side. transfer to a plate and keep warm.
Heat the remaining 1 t oil in pan and add shallots, cook stirring constantly scraping up browned bits untill golden borwn. Spring with remaining 1 T flour, stir to coat.
Add wine and chicken broth and 1/2 t salt. Bring to a boil stirring often.
Add the chicken back into the pan and simmer until cooked through, about 6 minutes. Stir in sour cream and mustard untill smooth, turn chicken to coat with sauce. Stir in chives, serve.
