Introduction

Very basic low calorie cauliflower soup Very basic low calorie cauliflower soup
Number of Servings: 10

Ingredients

    1 head of cauliflower
    1 medium onion
    3 cloves garlic
    5 carrots
    5 stalks celery
    2 leeks
    32 oz Chicken Broth
    28 oz Vegetable Broth
    2 tblsp olive oil
    2 tblsp butter
    1 teaspoon cumin
    1 teaspoon corriander
    1 teaspoon white pepper
    1 teaspoon nutmeg
    1 teaspoon paprika
    1 pkg fat free cream cheese

Directions

saute onion & garlic in olive oil and butter
add in celery, then leeks with a little chicken broth
Add in remaining chicken broth & vegetable broth & water
add in cauliflower & carrots.
Simmer for 20 minutes until veggies tender.

Prepare fat free cream cheese by warming, adding 2 tblspoons of milk, nutmeg and paprika and whipping to make smooth. Slowly add to soup for a light cream flavor and an orange tint.
