Introduction

This is a wee bit fancier than your average pot roast because it includes merlot, tomatoes, and baby portabellas. This is a lot of food. It's probably only appropriate for a 6 qt slow cooker unless you reduce the quantities. Ingredients

    3-5 lbs chuck roast
    1 large onion, chunked
    1 lb baby carrots
    2 lbs potatoes, cubed, or mini new potatoes. If you're using a non-waxy potato, add them with 1-1.5 hrs time remaining. Waxy potatoes can be cooked entire time.
    12 oz mushrooms
    1 28 oz can diced tomatoes
    1 cup red wine (we normally use merlot)
    1 can beef broth
    1 tbsp chopped garlic
    1 tbsp italian seasoning or basil
    salt & pepper

Directions

Add all ingredients to the slow cooker and cook on low until done. This takes most of the day, so it's a good one to start in the morning and come home to after work.
