Ingredients

    1 1/2 cups brown rice flour
    1/2 cup soy flour
    *1 cup rolled oats*
    *1 cup oat bran*
    1 cup non-fat dry milk
    1/4 cup flax seed meal
    1 cup cooked garbanzo beans, or 1 can drained
    2 tsp baking soda
    1 tsp salt
    2 tblsp cinnamon
    1 tblsp vanilla extract
    2 tblsp orange peel
    1 cup grated carrots
    1 cup grated zucchini
    2 oz pistachios, chopped
    2 oz almonds, chopped
    1/2 cup raisins
    1 3/4 cup chocolate chips
    2 eggs
    2 1/2 cups 2% milk
    3/4 cup packed brown sugar

    * Oats & oat bran are normally NOT gluten-free in the U.S. You can find a gluten-free brand at most health-food stores.

Directions

Mix egg, milk, sugar & vanilla in a large bowl. If using canned beans, rinse and drain well. Mash beans and stir in to egg mixture. Mix in veggies, nuts, orange peel, raisins & chocolate chips.

In another large bowl, mix flours, oats, bran, dry milk, flax, baking soda, salt & cinnamon. Gently stir into wet ingredients, mixing only enough to blend.

Pour into muffin cups. Bake at 350 F for about 30 minutes, checking after 20 minutes.
Makes 3 dozen (36) muffins.
