Introduction

These enchiladas are easy and quick to put together and make a great dinner with a salad on the side! These enchiladas are easy and quick to put together and make a great dinner with a salad on the side!

Ingredients

    2 lbs. boneless skinless chicken breast, shredded or cubed (I cook mine in the crockpot, then shred it)
    18 corn tortillas, 6"
    3 cups enchilada sauce
    5 cups cheddar cheese, 2% milk (or reduced fat)
    Onions, if desired

Directions

Preheat oven to 350 degrees and spray a 13" x 9" pan with cooking spray.

Spread a thin layer of enchilada sauce on the bottom of the pan. Cut 6 tortillas in half and lay them in the pan; spread a thin layer of enchilada sauce over the top of the tortillas. Add 1/2 of the chicken and 1/3 of the cheese. Add another layer of the sauce, another 6 tortillas, another layer of sauce, the remaining chicken and another 1/3 of the cheese. Add another layer of sauce, the remaining tortillas, another layer of sauce, and the remaining cheese.

Bake for 30 - 45 minutes, until the cheese is bubbling and starting to brown, and the casserole is heated through.

Makes 12 servings.
