Ingredients

Water, tap, 2.25 cup
Lime Juice, 1 lime yields
Fleischmann's Olive Oil Spread, 1 tbsp
Butter Buds, 1 tsp
Cilantro, raw, 1 tbsp chopped fine
Garlic, 1 clove, minced
Cauliflower, raw, .25 cup finely shredded
Brown Rice - 1 cup uncooked
Directions
1. In a medium pot, melt Fleischmann's spread over low heat. Add chopped cliantro, garlic and lime juice. Stir together.
2. Add water, Butter Buds and rice. Stir and bring to a boil, covered, over medium-high heat.
3. When water is boiling, reduce heat and simmer for 40-45 minutes, until water is absorbed.
4. While rice is cooking, grate cauliflower or shred in a food processor. When rice has cooked for 40-45 minutes, remove lid and stir in shredded cauliflower.
5. Replace cover and cook 5 minutes on low heat. Serve immediately.
