It's named trash can soup because it's made of whatever vegetables I have handy. I have a little bit of a sweet tooth, and this soup satisfies that when I use sweet potato with the tarragon. Ingredients

    2 cups of low sodium vegetable broth
    Vegetables (fresh, frozen, or unsalted canned)
    1 can of beans (any kind drained and rinsed)
    1 medium onion
    1 clove garlic
    2 T tarragon
    2 T parsley
    2 T black pepper
    Water to cover veggies

    Vegetables can consist of:

    Potatoes or sweet potatoes cut into 1 inch cubes
    Green beans
    Peas
    Carrots cut into chips
    Corn
    Celery
    Red bell pepper
    Broccoli
    Cauliflower
    Butternut squash

Directions

Combine broth, water, onion, celery, and garlic in a pot and cook about 10 minutes on medium heat.

Add the vegetables and seasoning, cooking until vegetables are softened.

Serving size is 1 cup.

Depending on how many vegetables (and water) you add, can usually make 6-8 servings.
