Number of Servings: 8


    canned mixed vegetables - drained
    lite mayonnaise
    1/4 cup diced onion
    1/4 cup diced celery
    shredded low-fat cheese
    reduced fat Ritz crackers


Drain canned mixed vegetables. In a mixing bowl stir mixed vegetables, light mayonnaise, diced onion and celery until well mixed. Stir in shredded low-fat cheese. Place in a casserole dish you sprayed with cooking spray.
Crush the low-fat ritz crackers in a zip loc bag. Pour melted butter in the crackers; spread over the top of the casserole. Bake at 350 degrees for 30 minutes. makes 8 servings.
