Introduction

Ingredients

    2 Flounder fillets, approx 4 oz each
    1/4 cup flaked coconut
    1/4 cup panko breadcrumbs
    1 Tbsp Bacardi frozen Pina Colada mix
    salt and pepper to taste
    cooking spray

Directions

Preheat oven to 400 degrees.

Mix panko breadcrumbs, salt, pepper and flaked coconut in a flat bowl.

Add a few drops of water to the frozen drink mix to thin it. With a pastry brush, coat both sides of each fillet.

Dredge the fillets in the panko/coconut mixture , coating both sides.

Cover a baking tray with parchment paper, spray with a small amount of cooking spray and bake the fillets for about 15 - 20 minutes or until crispy and golden. Be careful not to burn the coconut!

Makes 2 servings.
